Domesticated rice comprises two species in the Poaceae (”true grass”) family, Oryza sativa and Oryza glaberrima. These plants are native to tropical and subtropical southern Asia and southeastern Africa. Rice provides more than one fifth of the calories consumed worldwide by humans.

White rice is the name given to milled rice which has had its husk, bran, and germ removed. This is done largely to prevent spoilage and to extend the storage life of the grain. After milling, the rice is polished, resulting in a seed with a bright, white, shiny appearance.

Beaten rice is a rice which is dehusked and beaten to make small flat flakes.This type of rice absorbs even cold water and gets swollen.This type of rice is used in variety of dishes in Udupi cuisine.It is called Atukulu in Telugu, Bajeel or Bajil in Tulu, Aval in Malayalam and Tamil, Avalakki in Kannada and Poha in Hindi. There two varieties of beaten rice thin and fat. They are so called because of their thickness. Beaten rice can be up to 4 times thicker than regular rice.

Bhutanese red rice is a medium-grain rice grown in the Kingdom of Bhutan in the eastern Himalayas. It is the staple rice of the Bhutanese people.
Bhutanese red rice is a red japonica rice. It is semi-milled - some of the reddish bran is left on the rice. Because of this, it cooks somewhat faster than an unmilled brown rice.

Black rice is one of several black-colored heirloom plants producing rice variants such as Indonesian Black Rice, forbidden rice, or wild rice. It has a relatively high mineral content (including iron) and, like most rice, supplies several important amino acids.

Jasmine rice is originally from Thailand. It is a long-grain variety of rice that has a nutty aroma and subtle and pandanus leaf-like flavor. This rice should be rinsed before cooking to rid it of extra starch. The grains will cling when cooked, though having less amylopectin, it is less sticky than other rices. Most households in Thailand consume this type of rice and it is commonly found in supermarkets, this type of rice is mainly used for many types of rice dishes or plain white rice in Thailand.

Puffed rice is usually made by heating rice kernels under high pressure in the presence of steam, though the method of manufacture varies from location to location. Puffed rice is used in snack foods and breakfast cereals, and is also a popular street food in some parts of the world. It is an ingredient of bhel puri, a popular Indian chaat item. Puffed rice is referred to as mur mure in some parts of India. It is also called churmuri and kurlu in Tulu.

Red rice, also known as weedy rice, is a species of rice that produces far fewer grains per plant than cultivated rice and is therefore considered a pest. Because red rice and cultivated rice are so closely related, herbicides that would kill red rice would also kill cultivated rice. A genetically modified form of cultivated rice has been developed that will resist a herbicide, but this form of rice has not been approved for human consumption. This genetically modified form of cultivated rice has, however, appeared on the rice market. It is also a delicacy in the mariana island Guam.It is made by mixing rice with water with achoti to give it its red coloring.Caocasians;however,refer to it as orange rice.
